Writing:
Writing is about discourse---it's an imagined dialog, crafted and polished by an individual, in anticipation of another mind's reception.
Writing is a tool for communication, a process for developing and distilling one's understandings, and an experience that can be both privately cathartic and publicly empowering. The personal and public sides of writing reinforce one another: the work of writing privately tests one's ability to perceive others' viewpoints, and the touchstone of actual public feedback provides guidance for the next round of personal development in craft.
In a way, all courses I teach revolve around composition and rhetoric---at the very least, I am always in the process of composing, delivering, and revising my courses. When I am ACTUALLY teaching a Writing course, I will post my syllabus and interesting discussion boards here.
